Strawberry Cashew LOVE Cookies - Fun Food for Fun People

These beautiful, nutritious heart-shaped cookies are not just for Valentine's Day.

Love yourself with this raw sweet treat!

 

Recipe:

Ingredients:

2 cups cashews

1 bag (1.2-oz. or 34 grams) freeze-dried strawberries (silica packet removed and discarded, if present)

1/4 cup melted coconut oil

2 Tbsp maple syrup

1/4 tsp salt

 

Pulverize the freeze dried strawberries (you may do this in a food processor, or by grinding them with a mortar and pestle or placing them in a plastic zip lock bag and gently pounding them with a kitchen mallet until pulverized).

Combine the cashew flour and pulverized strawberries in a glass bowl.

Add the melted coconut oil, maple syrup, and salt

Combine with a fork or by using your fingers until the mixture is lumpy and uniform

Using a heart-shaped cookie cutter on a sheet of parchment or silicone baking mat, spoon a couple of tablespoons of batter into the cookie cutter, then press the batter into the cookie cutter, paying careful attention to press it into the edges of the mold. Gently lift off the cookie cutter, leaving the cookie on the parchment. When you have used all of the dough, freeze the cookies on the parchment for at least 2 hours.

When frozen, you may place them between sheets of parchment in a zip lock bag or air-tight glass container.

Remove 15 minutes before serving. Makes a great breakfast on the go or a beautiful dessert that won't undermine your nutritious eating plan.
