Delicious, easy Zucchini 2-egg Frittata

Zucchini 2-egg Frittata

This is a simple, nutrient-rich, delicious meal that will help you to improve the quality of your dietary fuel, providing you with sustained energy throughout the day. It’s easy, inexpensive, fast, and generates minimal waste – truly a win-win!

You will need:

A glass bowl

A standard kitchen grater

A small spatula

A small non-stick, oven-safe skillet with a metal handle



1 medium zucchini

2 eggs

1 tsp. butter

1tsp. olive oil

2 Tbsp. parmesan cheese (feta or goat cheese are other options that are delicious in this dish)

Fresh herbs, if desired



Wash and dry the zucchini. Cut off and discard both ends and grate into the glass bowl.


Melt the butter and olive oil in the sauce pan and add the zucchini once the butter is melted and starting to bubble.

Sauté the zucchini until it is warm, no longer watery, and starting to caramelize, about 3-5 minutes.

Break the eggs into the glass bowl and whisk to combine. Pour into skillet and stir until the eggs and zucchini are mixed together and the eggs have started to set.


Sprinkle parmesan or other cheese over the egg mixture and place the skillet under the broiler for 1-2 minutes until the eggs are completely cooked. Remove* and serve with a sprinkle of sea salt or fresh herbs, depending on your preference.

Serve immediately or refrigerate in a glass container for a delicious, portable meal later in the day. Keep refrigerated until ready to eat, then reheat until warm. This dish is great served with a green salad, or you can make a sandwich by serving it on a piece of sprouted grain toast.
